About Gourmet Olive Oil

Olive oil is a famously key component of the Mediterranean diet, and has been extracted from olives in the region for nearly 5000 years. In Ancient Rome, conquered populaces were required to pay taxes to the Empire in the form of olive oil. In Greece alone, with the highest olive oil consumption in the world, there is a per capita annual consumption of 26 liters. Italy and Spain consume 14 liters, and by contrast Northern Europeans and North Americans consume less than one liter a year. It is time for us to jump on the bandwagon!

Olive oil is a monounsaturated fat, known for lowering cholesterol and therefore protecting against heart disease. Extra-virgin olive oil also has high amounts of polyphenols, an antioxidant, and boasts less than 1% acidity. Extra-virgin olive oil, widely acknowledged as the most flavorful and fruity grade of Olio Oliva, is created by "cold-pressing" the olives. This means that olives are ground into a paste and then literally pressed in the traditional method, or mechanically crushed without pressing. Heat can be applied to yield a higher volume of oil, but this unfortunately changes the flavor of the oil, so cold-pressing is preferred.

We also carry unfiltered oils for those who prefer a more natural and flavorful state, and organic EVOO. Like fine wine, each of our oils boasts it's own unique range of flavors and characteristics.
